Critical Control Point (CCP)

What is a Critical Control Point (CCP)?

A Critical Control Point (CCP) is the stage of a food process at which an essential control is applied to prevent, eliminate or reduce a food safety hazard to an acceptable level. It is a core concept of the HACCP system.

Each CCP requires defined critical limits, continuous monitoring, corrective actions and documented records.
