Cross-Contamination

What is cross-contamination?

Cross-contamination is the unintentional transfer of contaminants, microorganisms or allergens from one product, surface or piece of equipment to another food item. It can happen through direct contact, shared utensils or improper handling.

Preventing it requires cleaning procedures, segregated product flows and verification records.
