Allergens

What are food allergens?

Food allergens are substances present in certain foods — such as gluten, nuts, dairy, egg or shellfish — capable of triggering adverse reactions in sensitive people. Regulations require declaring them and controlling their presence in the product.

Managing them means preventing cross-contamination, validating cleaning between production runs and ensuring accurate labeling.
