What are prerequisite programs (PRPs)?
Prerequisite programs (PRPs) are the basic hygiene conditions and activities needed to maintain a safe production environment, such as maintenance, pest control, staff training or cleaning. They underpin the food safety system.
They're the foundation HACCP is built on: without solid PRPs, control of critical points loses its effectiveness.
